The world-renowned Sonora farm lies at the foot of the Poás Volcano and thrives with biodiversity. Spanning a hundred hectares, it combines renewable energy, sustainable farming methods, and an exceptional terroir. Imagine this: the farm runs on electricity from a hydroelectric generator that transforms the power of the river! This generator supplies energy to both the wet and dry mills, as well as to everyone who lives and works on the farm.
This coffee is of the Villa Sarchi variety. The cultivar originates from the village of Sarchi, just a few kilometers from Sonora. What makes it unique is that it is the first natural mutation of Bourbon. A single altered gene causes the plant to grow lower than the original Bourbon. The plant is well-adapted to local conditions, tolerates windy weather, and produces an excellent cup quality.
The Guardia family has owned the farm for more than a century. Since the 1970s, coffee has been their main source of livelihood. In 1999, Alberto Guardia invested in a processing station to focus more on quality. This was during a time of historically low coffee prices. By doing so, he became a pioneer of special processing methods at that time – honey and natural processes.
Having gained tremendous experience, today Sonora is home to more than 20 coffee varieties. A wide range of processing methods and fertilizers complement its incredible terroir. This naturally processed lot is sweet, vibrant, and remarkably intriguing in terms of Costa Rican flavor profile. We enjoy it with a smile.
