In the southern part of the Tolima department stretch the picturesque heights of a vast natural reserve known as Las Hermosas. In Spanish, the name translates as “The Beautiful Ones”, highlighting the immense natural beauty of this unique terroir. Bordering the reserve lies a canyon of the same name, adding even more charm to the stunning landscapes.
With its abundant water sources — rivers, lakes, and streams flowing through the canyon — this place is a true paradise for rich biodiversity, including coffee farming. After all, coffee processing requires vast amounts of water.
In earlier times, coffee farmers from Chaparral had to transport freshly harvested coffee to the processing station in the town of Rioblanco. But as coffee production developed, Caravela built a new processing station in Chaparral, much closer to these unique coffee plantations, naming it after the reserve. The station began operations in 2022 and started working with twelve farmers.
This lot comes from traditional Colombian farmers and has been processed using the classic washed method. Freshly harvested cherries are depulped and then fermented in water for about a day. Afterward, the beans are washed 3–4 times with large amounts of water and dried either on African beds or on Casa Helda — specially arranged rooftop patios. This traditional method highlights the coffee’s genetic traits, giving it a round and juicy character with bright, expressive notes.
