In the very heart of the Guatemalan highlands, among the breathtaking mountains of the Huehuetenango department, lies the picturesque farm of Sergio Martinez Rita in the small municipality of La Democracia. These enchanting lands are a true example of natural beauty, rich cultural heritage, and hard-working farming communities.

The people of La Democracia are culturally advanced and continuously striving for progress, including coffee farmers. This drive is reflected in the development of education and healthcare in the region, and is closely tied to the production of entirely organic coffee — cultivated without chemical fertilizers.

La Democracia is a place where ancient traditions meet modern approaches to life. Here, coffee processed by the traditional washed method is combined with generations of experience and a scientific approach to soil care and specialty coffee cultivation.

This lot, handpicked on the mountain slopes, was delivered straight to the processing station and washed with clean water. The cherries then underwent depulping and wet fermentation. After about a day, once fermentation was complete, the beans were washed in water channels to remove any remaining pulp. Finally, the parchment coffee was set out to dry.
